Cardamom and Raspberry Swedish Buns

Scandinavians love their buns and we found this great Swedish inspired recipe for Cardamom and Raspberry Swedish Buns. We found this Scandi inspired spiced and fruity bun in Olive magazine and we think it is perfect for all the family.

Here are the ingredients for Swedish buns:

  • Milk 250 ml
  • Yeast 2 x 7 gram sachets
  • cardamom, 1 tsp ground (break open the pods & crush seeds) or buy ground cardamom
  • eggs 2
  • strong bread flour 750 grams
  • butter, softened 75 grams
  • soft brown sugar 75 grams
  • Filling:
  • butter, softened, 100 grams
  • cardamom ground 1 tsp ( as above)
  • soft brown sugar 75 grams
  • frozen raspberries (leave frozen)
  • egg 1 (beaten)
  • pearled or demarera sugar for sprinkling.
